Lets talk Disney. More specifically Disneyland and California Adventure. I’ve been to Disneyland every year for the past four years, and honestly, if you said “pack your bags” I would go again in a heartbeat. Not only does Disneyland land bring back nostalgia, the magic is baked right in. Growing up and traveling, all i remembered was the rides. The smell when you step on the boats at Pirates of the Caribbean, the clanging you hear when you tug the “do not disturb” rope in Indiana Jones, the intoxication of vanilla that wafts to your hearse half-shell in the Haunted Mansion.

I recently came back from Disneyland with a girlfriend and her kids, and seeing the park through the kids eyes was so much more magical. Sure there was whining from running between the parks until our feet are buzzing and aching, and finding snacks at every turn, but seeing their faces as they take the wheel on the Indiana Jones jeep and for the first few minutes of the ride truly believing they are driving is just fantastic.

One thing I was able to introduce them to is Churro Toffee. I swear this is the taste of Disneyland. The buttery toffee robed in white chocolate and dipped in cinnamon sugar.

As you might have realized by finding this in the Family Favorites tab rather than the home tab, this recipe is quite filled with sugar, so beware this may be a trigger for you if you are sensitive of refined sugar.

Ingredients:

  • 2 cups ghee

  • 2 cups white sugar

  • 1 tsp salt

  • 1 tsp vanilla extract

  • 2 bags Ghiradelli white chocolate melting wafers

  • 1/2 cup white sugar & 3 tbsp cinnamon, mixed

Instructions:

  1. Place parchment paper in a large baking sheet.

  2. Place the ghee, sugar, and salt in a large saucepan over medium heat, stirring until the ghee is melted. Mixture will come to a boil, and cook until the mixture becomes a dark golden color. Cook and boil until the temperature has reached 285 degrees. Continue stirring occasionally.

  3. As soon as the toffee reaches temperature, pour into the baking sheet.

  4. after toffee settles in the baking sheet, for about 2 minutes, take a plastic knife and start cutting into squares. Toffee will be soft to touch, so you want to go over the score lines several times ( at least 4-5 times).

  5. Once you are happy with your squares, place baking sheet into the refrigerator and let set for at least 20 minutes.

  6. Melt white chocolate wafers according to package directions.

  7. Mix your white sugar and ground cinnamon into a shallow wide bowl and set aside.

  8. Dip each square of toffee into the chocolate, and immediately sprinkle both sides with the cinnamon sugar. place on parchment lined baking sheet to set.

  9. Let churro toffee settle for at least 40 minutes, or until chocolate is completely hardened.

  10. Enjoy!
