Corn Casserole
Though I am 100 % against winter and all the cold weather and icy roads that accompany it, I do enjoy the cozy home cooked feeling that winter brings. The recipes that fill the tables are like sherpa blankets wrapping you up tight. Consider this the 5 ingredient sherpa blanket, how can you go wrong with this!
Ingredients:
1 can of sweet corn, drained
1 can of creamed corn, not drained
1 cup sour cream
1/2 cup butter, melted
1 box Jiffy Corn Muffin Mix
Instructions:
Preheat oven to 350 degrees.
In a medium size bowl, combine all ingredients until well incorporated.
Pour mixture into a greased 8”x 8” pan.
Cook uncovered for 45-50 minutes, until top and edges are golden brown.
Remove from oven, let cool.
